Raw Olivie/Potato/Egg Salad

This salad reminds me of so many different things I had to name it everything! I was inspired by the Rawtarian's recipe for Raw Egg Salad but changed the recipe to accommodate my tastes and make something completely different.

Raw Olivie/Potato/Egg Salad:

       Dressing Ingredients:
  • 1/2 cup of soaked cashews
  • 1/2 cup of water
  • 1 tablespoon of lemon juice - I would add more if you like lemon juice
  • 1/4 teaspoon of turmeric
  • 2 cloves of garlic
  • 1/2 tsp salt 
  • 1/4 jalapeno, seeds removed - you can add more if you like really spicy food
       Salad Ingredients:
  • 1/2 cup of soaked cashews
  • 1 tomato
  • 2 stalks of celery
  • 2 radishes
  • 1/2 bell pepper
  • 1/4 red onion
  • 1/2 green apple
  • 1/4 jalapeno pepper, seeds removed
  • handful of dill, cilantro, parsley
  • 1/4 tsp salt
  • other vegetables/fruits can be added like zucchini, avocado, more peppers, etc to make the salad "softer" or "fattier"
  1. Blend the dressing ingredients in a high speed blender until smooth.
  2. Process the salad ingredients until chopped (I hand chopped most of the ingredients because I have a small processor and the ingredients are easy to hand chop but you can use a food processor)
  3. I reserved the chopped bell pepper to sprinkle on top of each plate.
  4. Mix the salad ingredients with the dressing until mixed through and serve on a bed of greens like arugula, spinach, or lettuce.
  5. Sprinkle with lemon juice and salt to taste! Yummm
