I made a raw carrot cake today from Emily Von Euw's Raw Carrot Cake Recipe
It looks great and I will test it on my non-raw family tomorrow when I visit and see what they think cause I know they love regular carrot cake. I have never made a raw carrot cake before so this should be interesting.
I substituted the oats for a mix of hemp hearts, pine nuts, almonds, and walnuts. I plan to decorate it with some goji berries and dried mulberries. Should be beautiful.

It tasted great but is a little heavy for making it often. The cream as well as the carrots were rich tasting; some people said they couldn't believe the carrots were not cooked. This is a good treat to bring to friends and family so that everyone gets one, rich piece.
